輸出業者が自由に加工するのではなく、ジャマイカのカカオ産業公社(Cocoa Industry Board)が生産者からカカオを買い取り、統制された環境の中でカカオ豆として加工します。

Jamaican cocoa is recognised as one of the nine exclusive producers of “fine of flavor” cocoa.
The rich full-bodied flavour of the Jamaican cocoa is largely due to the micro climatic conditions of the growing areas where there are more suited. Cocoa trees thrive in the highlands of Jamaica from the eastern to the central regions of the island.
Jamaican cocoa is highly sought after. 98% are exported to Switzerland, France, Japan, UK and USA to improve the flavor of cocoa from other countries to make gourmet chocolates, fruit conserves, liqueurs, and patisserie to list a few.
The Cocoa Industry Board processes, regulates and is the sole exporter. It purchases the beans from the farmers in the wet form and then process them under controlled conditions for export.
